HALAL HONEY AND PINEAPPLE QUAIL
-4 Réghalal quails
-1/2 clove of garlic
-1 tablespoon of lavender honey
-1 tablespoon of olive oil
-50 grams butter
-Salt and freshly ground pepper
Preheat the oven to 210°C
Peel and chop the garlic.
Mix the honey, olive oil and chopped garlic in a bowl. Season with salt and pepper.
Peel the pineapple and cut it in half, then remove the core and dice the flesh.
Melt 40 grammes of butter in a pan and brown the halal quails on all sides over high heat.
Butter a dish, place the quails in it surrounded with the pineapple cubes and cook in the oven for 20 minutes, regularly basting the quails with the honey mixture.
Plate the halal quails and pineapple cubes in four hot plates and sprinkle with freshly ground pepper.
